Allergen matrix (the 14 allergens)What the sheet looks like
| Dish | Celery | Cereals with gluten | Crustaceans | Eggs | Fish | Lupin | Milk | Molluscs | Mustard | Tree nuts | Peanuts | Sesame | Soya | Sulphites | Checked by / date |
|---|---|---|---|---|---|---|---|---|---|---|---|---|---|---|---|
How to use it
- List each dish on the menu.
- For each ingredient, check the label or the supplier’s specification. Mark Y for every allergen the dish contains.
- Name the cereal containing gluten (wheat, rye, barley, oats…) and the tree nut (almond, hazelnut, walnut…).
- “May contain” warnings count: decide how you’ll tell customers about them.
- Review a dish whenever its recipe, an ingredient or a supplier changes, and date it.

When paper gets hard to keep up
Paper sheets get missed on busy days, filled in at the end of a shift, and lost when you need them. In Hygivo, each menu item keeps its ingredients and evidence, is marked reviewed by a person, and goes back to “needs review” when an ingredient changes. Allergen records in Hygivo.
