How to use it

  1. Write the business, location and week at the top.
  2. Give each fridge and freezer a name staff will recognise (“Walk-in”, “Bar fridge 2”) and use it every time.
  3. Take a reading at the start and end of the day, or as often as your HACCP plan says. Write the actual number, not a tick.
  4. If a reading is out of range, write what you did (moved the food, called for repair, threw food out) and check again.
  5. A manager reviews and initials the sheet. Keep it with your records.

The FSAI guidance figures

  • Chilled food: 0–5 °C
  • Frozen food: −18 °C or colder

These are guidance figures. Use the limits in your own food safety management system, and see the FSAI Safe Catering pack and food safety temperatures explained.

When paper gets hard to keep up

Paper sheets get missed on busy days, filled in at the end of a shift, and lost when you need them. In Hygivo, staff see which fridges are due, enter the reading on their phone, and an out-of-range reading asks what was done and alerts the owner straight away. Temperature logs in Hygivo.
